Grading: We make a grading examination so we know average weight , average grade and main defects found in each lot.
We strictly do the sampling of the inspected fish according to the rules of the Codex Stan 233.

- Histamine Tests: 9 samples per lot. Average Histamine level found 5 ppm; Maximum found: always less than 15 ppm
- Boiling test: After selecting the worse pieces found; we cook them in order to check for subcutaneous defects ( pasting, honeycomb, bruises and we also taste of the meat to detect any kind of meat contamination.
Once we have done all our tests, we provide a complete Pre-loading inspection report where our buyers have all the information concerning the lot they will ship.
This document is a compehensive resume of all the work done for each lot, including the laboratory results, and also the organoleptical and weight results.

The
day of the load of the fish into the container we do another
inspection for reassuring we are providing the desired quality. We
check some fishes of every pallet/cage to be loaded.
After the load of the goods into the container, we provide the Container loading supervision report , so we have detailed control over the weight, the grade, the temperature of the load.
